Gluten is the protein of the wheat that is used in baking whole grain breads. It increases the protein count, helping the rise and the softness of the end product.

Vital wheat gluten gives lower-protein grain a big boost in rising power. If you have a Bosch mixer, you can forgo this product as your Bosch works the gluten well.


This is a necessary ingredient when using an auto bread bakery unit, other mixers, and low protein wheat. You can also use the wheat gluten to help breads made with other grains such as oats flour, barley flour, rye flour, etc. Remember, with your Bosch Universal Plus Mixer, you do not need to add Vital Wheat Gluten as it does a perfect job in working the gluten!

Product Description

Directions: 1 1/2 tsp Vital Wheat Gluten per cup of whole grain flour or 1/4 to 3/4 cup Vital Wheat Gluten per 10 - 12 cups flour.
