Here in Oklahoma, you can find the Hard White Spring Wheat from Montana which makes a lighter, fluffier loaf. It makes 100% whole wheat bread but makes a lighter colored loaf. It has a sweeter flavor and is definitely the grain the majority choose, when selecting wheat berries. If you are introducing your family to the idea of whole wheat bread, I would choose this white spring wheat grain.
Montana White wheat comes with a variety of labels: Golden 86, Prairie Gold, Spring White Wheat. A good quality wheat comes from Montana which is what I sell here in Oklahoma.
You will want to make sure your wheat grain is kept in sealed food grade buckets to protect it from bugs, mice and water, which are the main culprits in destroying your wheat berries. The Montana wheat that you find here at Paula's Bread is in a food storage bucket that is nitrogen packed. The Montana White wheat will be protected from both bugs, mice and water!
