Sample Recipe: Christmas Cheese Ball or Log

Yields: About 3 1/2 Cups Step #1 Thoroughly blend together in electric mixer or by hand; chill thoroughly:
  • 8 oz package cream cheese, softened
  • 2 cups (1/2 lb) grated cheddar cheese
  • 1/2 cup finely chopped pecans (chop in blender or on cutting board by hand)
  • 1 small onion, drained and chopped, optional
  • 2 oz. jar pimiento, drained and chopped, optional
  • 2 teaspoons soy sauce
  • 8 oz (medium sized serving) cooked salmon, shredded for special flavor
Step #2 Place parsley springs in blender (or chop on cutting board) to make: 1 cup finely chopped parsley Step #3 Roll cheese mixture into a ball or log and roll it in the parsley. Chill until ready to serve.
